Simple 10 mins Red Salad | VG

Yummy ebly salad – 10mins only.
Whole wheat is how you want to eat your wheat! Cut the processed stick to the whole!  It contains large quantities of minerals, especially potassium, phosphorus, magnesium, iron and zinc

Prep time : 15mins
Cook time: 10mins
Serves 4-6

Ingredients:
1 1/2 cup of whole wheat precooked
1 cup of chickpeas
2 cooked beetroot
1-2 red onions
1/4 of a broccoli
1 small zucchini (I use a yellow one)
2 cups of raw baby spinach
1 t. spoon of salt
10cl olive oil
7cl apple cider vinegar
1 coffee spoon of mustard

Step 1
Cook your whole wheat in little water – takes approx 10mins.
In the meantime, chop your zucchini and broccoli for a tiny fry. Add a little oil into your pan and cook for approx 3-4mins your veggies. (zucchini and broccoli).

Step 2
Chop the rest of your veggies, onions, beetroot, spinach and add everything into a bowl – add the cooked chickpeas.
When the wheat is cooked, wait until it is cold to add it to your salad mix, as well as the stir fried veggies.
